Recipes
expand_moreSavoury Truffles
Ingredients:
• Cream 180 gr.
• Glucose syrup 60 gr.
• Chocolate 70% 400 gr.
• Cocoa butter 30 gr.
• Butter 40 gr.
• Sosa speculoos paste 10 gr.
• Cocoa powder q/
• Gingerbread mix q/n
• Concentrated mint paste 10 gr.
• Matcha green tea powder q/n
• Concentrated raspberry paste 10 gr.
• Raspberry powder q/n
• Concentrated mango paste 10 gr.
• Passion fruit powder q/n
Preparation:
Melt chocolate and butter. Melt cocoa butter separately and then mix with chocolate. Heat cream and glucose to 50°C. Emulsify both mixtures and add speculoos paste. Fill truffle molds and let cool.
Dressing:
Once the truffles are out of the mold, dip them in melted chocolate, turn with your hands and immediately coat them with cocoa powder mixed with the powder.
