It is a powdered gelling agent obtained from bacterial fermentation . For optimal use, mix the products with a liquid while heating. Usable with all types of liquids, it is heat-resistant, non-freezable and of natural origin. You can use this product to make firm and rigid gels (such as pastes, jellies and jams) that can be put in the oven.

Gellan gum can form a solid gel at a concentration of 0.1% in an aqueous preparation. The dissolution and gelation temperatures of gellan gum vary according to the different types used.

Dissolution occurs between 85°C (185°F) and 95°C (203°F) and gelation occurs upon cooling, between 10°C (50°F) and 80°C (176°F). Gellan gum gels are not thermoreversible, i.e. the gels formed are not altered by high heat. Once set, the high acyl gel can be heated to about 80°C (176°F) without melting, while the low acyl gel can withstand much higher temperatures. These gels maintain their stability over a wide range of pH.

  • Use: A gelling agent discovered relatively recently (1977) obtained from the fermentation produced by the bacterium Sphingomonas elodea. The type of gellan obtained varies depending on the process used.
  • This sample is the rigid gellan. Gellan produces a firm gel with a clean cut that can withstand temperatures up to 90°C (hot gelatin).

Information: Gellan gum is a water-soluble gelling agent that has special characteristics that allow for a wide variety of uses.
A gelling agent produced by the fermentation of algae, gellan gum is used in molecular cuisine to make all kinds of firm jellies with clear shapes.

*NATURAL INGREDIENT:
Ingredients that contain elements present in nature: These ingredients can come from plants, animals, minerals or even microbial sources.

They also include ingredients that have undergone physical or enzymatic treatment and/or have been in contact with natural substances, provided that their molecular structure has not been modified or that it does not exist in nature. Natural are considered to be chemical reactions caused by acidification or alkalinization in contact with products that are part of the list of additives authorized in the EU that are considered Natural ingredients or Naturak derived  ingredient.

Natural Ingredients are also considered to be ingredients that contain up to 5% of Naturally Derived or Natural Flavour ingredients.

Products that do not contain ingredients of animal origin (meat, fish, seafood, etc.) or processed foods that have been in contact with products of animal origin (such as bones, for example).
