Powder gelling agent composed of starchy LM pectin, ideal for chocolate toppings. For optimal use, mix the product with a liquid while heating. Usable with all types of fatty or milky liquids, it is not heat resistant, can be freed and acts quite slowly (24 hours). You can use this product to make chocolate toppings or products rich in calcium.

Properties : Starched LM pectin with retarding salts.
Use : Mix with sugar, bring to the boil.
Use : Appropriate pH > 4. At least 50-60% added sugar.
Notes : Slow gelling. Final effect after 24 hours. Thermoreversible, firm, shiny and elastic gels. Perfect for freezing and defrosting. Optimal coating temperature: 50-55°C.
Elaborations : For chocolate coating, dairy jellies. Suitable for products rich in calcium.
