Description
expand_more- Properties: Transparent and elastic gelatin
- Use: Dissolve cold and bring to 65°c (boiling recommended). Gels from 60°c.
- Use: Any type of liquid with a water content greater than 80%.
- Note: Do not freeze. Heat-shrinkable.
- Preparations: False spherification / false fruit pastes / veils / cold spaghetti / gelatin at 60°c / topping
Application product: water and all kinds of liquids containing a volume of water greater than 80%.
All kinds of fruits (+acid>gels).
Emulsions with fat levels not exceeding 200 gr/kg of water.
Suggestions:
Sugar-free fake fruit pastes.
Jelly strips
Ravioli, stuffing and Canelonis.
Fake caviars and fake runny spheres.
- GELIFYING AGENTS:
- Heat to 90° and use immediately.
- Can be reheated as often as necessary.
- Gelling temperature 60°
- SPHERIFICATION:
- Membranes can be made from any of the liquids or semi-liquids listed above. Freeze a half-sphere of a liquid of your choice at -20°C. It is recommended to add about 20 gr of Gelepessa to the mixture.
- Heat the liquid with 50 g of gelatin that will be used later to coat the sphere. Heat the mixture to 90°C.
- Stick a needle into the frozen half-sphere and dip it in the hot gelatin, one or more times, depending on the thickness of the desired membrane.
- Let the half-sphere defrost and serve. Can be used as a mise en place.
