Like other carrageenans, it is a gelling agent extracted from red algae (mainly Chondrus and Eucheuma species) found on the coasts of the North Atlantic and in the seas of the Philippines and Indonesia.

  • Properties: Soft gel.
  • Use: Apply at room temperature, bring to 80°c, better to boiling.
  • Use: All liquids.
  • Notes: Not stable for freezing. Can be heated up to 50°c.
  • Elaborations: Pannacottas / flans / puddings / curds / drinkable gels.
  • Allergens: Allergen-free.

Information: Iota has very specific properties that allow to obtain a gel with a soft and elastic consistency or hot gelatins.

Characteristics: Presentation in the form of refined powder. Dissolve cold, then bring to approximately 80 °C to produce gelation. Soft gel that only forms when the mixture is no longer agitated. In the event of breakage, the gel can be recomposed after a resting period.

Ingredients that contain elements found in nature: These ingredients can come from plants, animals, minerals or even microbial sources.

They also include ingredients that have undergone physical, enzymatic treatment and/or have been in contact with natural substances,provided that its molecular structure has not been modified or that it does not exist in nature. Natural are considered to be chemical reactions caused by acidification or alkalinization in contact with products that are part of the list of additives authorized in the EU that are considered Natural ingredients or Naturak derived  ingredient.

Natural Ingredients are also considered to be ingredients that contain up to 5% of Naturally Derived or Natural Flavour ingredients.

*VEGETARIAN:
Products that do not contain ingredients of animal origin (meat, fish, seafood, etc.) or processed foods that have been in contact with products of animal origin (such as bones, for example).

Milk gelatin

  1. 200 g milk / 0.6 g Iota
  2. Mix the milk with the Iota, then blend until dissolved.
  3. Heat to 80 °C in a pan, then leave to set in the refrigerator.

Pineapple gelatin

  1. 250 g pineapple juice / 0.3 g Iota
  2. Mix the pineapple juice with the Iota, then place in a pan.
  3. Bring to a simmer and leave to set in the refrigerator.
