  • Plant origin: Carrageenans (vemella algae) + Goma garrofin (alggarroba).

  • Properties: Clear, freezer-resistant jelly.
  • Usage: Mix the powder with the rest of the solids, add the liquid and whisk very hard. Heat the mixture to at least 80°C. Let it cool below 40°C, it will start to gel.
  • Note: Do not interact with alcohol or oil.
  • Elaborations: False spherification / false fruit pastes / veils / other cold gelatin elaborations for pastry.
