Sosa Ingredients Pectin 325 NH 95 is a plant based gelling texturiser.

It is a low methoxyl amidated pectin (LMA). This thickener and/or gelling agent (in the presence of calcium) is particularly suitable for making fruit-based preparations.
This jam pectin is heat-reversible between 40 and 60°C.
Adapted for use with dairy products or calcium-rich fruits, and in the preparation of fruit jams, dairy products and fruit jellies low in sugar or calcium.

Use

  • Mix pectin with sugar. Incorporate to the pulp with strong agitation. Bring to a boil and add acid
  • Recommended dosage: 0.5 - 1% for jam / 1 - 1.5% for jelly or creamy preparations
  • Rapid gelification. Final effect at 24h. Strong gels. Thermoreversible
  • Adapted for use with jams or fruit based fillings
