Sosa Gracila Gel: Gracilaria Algae Powder.

100% plant-based gelling agent, not considered an additive. An alternative to agar-agar, pectins, or carrageenans.
The slow gelling allows for creamier textures.
It can gel in acids and highly salted liquids, in dairy bases, and even in high-proof alcohols.

The gelled texture withstands temperatures above 70°C (158°F). It is heat-reversible from 85°C (185°F).
Gracila Gel is ideal for making gelatins, gels, compotes, flans, and curds.

Use

  • Acts as a thickener and gelling agent. It has some textural characteristics very similar to those of Agar-agar.
  • Easily soluble in cold liquids up to 45ÂşC. It needs to be heated to a minimum of 85ÂşC to hydrate properly and obtain maximum texturizing characteristics
  • Resists temperatures above 70ÂşC, resisting the gelled texture. It is thermoreversible from 85ÂşC.
  • Preserves the ability to gel in acidic liquids such as lemon juice or vinegar. Also in salty liquids like soy sauce. Dairy bases and even high-grade alcohols (from 0.8% dosage)
  • Recommended dosage: 0.1 to 2 %.

Allergens

May contain traces of eggs, peanuts, soy and soy based products, milk and its derivatives, nuts, celery, mustard, sesame, sulphites.
