Sosa Ingredients Acid Free Pectin is a gelling texturiser.

Low methoxyl amidated pectin (LMA) with added calcium. It is a thickener particularly suitable for the manufacture of dairy and fermented products.
It is thermoreversible between 40 and 60 °C. No syneresis.
For use in gelling of low-fat dairy and fermented products, for the stabilization of creams, for jellies without the presence of acid, achieving an improved consistency.

Use

  • Mix with the sugar and apply with strong agitation. Bring to a boil
  • Recommended dosage: flans, caramel custards 0.5 to 0.7 % / custard creams 0.5 to 0.8 % / jelly 1.5 to 2 %.
  • Without Sineresis, Thermoreversible between 40 to 60°C
  • Gelation of low-fat dairy and fermented products, stabilization of creams, gelled without the presence of acid
