Thanks to the caviar box you can make 96 pearls at once!
Implementation: Preparation of the alginate solution: gradually sprinkle 2.5 g of alginate in 500 ml of the chosen liquid (fruit juice, vegetable juice, etc.). Mix with an electric mixer (giraffe) until the product is completely dissolved. Leave to stand for 30 to 45 minutes to avoid lumps forming. It is recommended to add the alginate to 2/3 of the juice and then add the remaining juice. It is also possible to vacuum-pack the mixture to eliminate any residual air incorporated during the action of the electric mixer.
For the calcium chloride bath: dissolve 2.5 g in 500 g of water for example, the doses can change from one recipe to another.
Important note: use a precision scale to the tenth of a gram.
Spherification: to make spheres or fake caviar, you must incorporate small quantities of the liquid-alginate mixture drop by drop into the calcium bath. Then after 30 seconds, remove the pearls and rinse them in an ice water bath. It is recommended to test the solution by injecting a few drops of the algin solution with a syringe directly into the calcium bath in order to check the dosages.
With the caviar box: pour the solution to be spherified into the lid of the caviar box, insert the part containing the tubes and fill the syringe with 5 ml more in order to obtain sufficient pressure and fill the 96 tubes.
Turn the caviar box upside down over the calcium solution and slowly inject the extra solution with the syringe to allow the solution to be evacuated by pressure into the 96 tubes. Be careful not to tilt the caviar box to ensure uniform distribution. Remove the pearls thus formed, rinse them in an ice water bath, and serve immediately. It is important to remember that the longer the pearls remain in the bath, the more they will gel.
