Powdered thickener made from legumes. For optimal use, mix the product with the liquid, while heating. Usable with all types of liquids, it is heat-resistant, freezable and of natural origin. You can use this product to make coulis, sauces or purees.

  • Use: Mix with the liquid and bring to the boil. Let cool.

  • Directions for use: Used as a texturing agent in multiple preparations (thickening sauces, limiting crystals in freezing), dissolves in a cold or warm liquid between 3 to 6 g/L (do not exceed 1% otherwise a sticky and floury texture will result). Insensitivity to pH and exotic fruit enzymes. Slows down water loss and improves softness in baking. Superior effect with xanthan.
