  • Properties:  Make gels that retain a lot of water.
  • Use:  To dissolve in a liquid at 70°c for complete dissolution.
  • Application:  Any preparation with an aqueous or fat solution.
  • Notes:  Once mixed with the liquid, let it simmer at 50°c for 2 hours so that it acts properly, it can then be frozen. Thermoreversible between 35 and 40°c. It prevents syneresis during defrosting.
  • Preparations:  Replaces fat in mousses, ice creams and creams. Creamy without fat. Bulking agent.
Inulin takes  its name from the plant called Inula.
Inulin can be extracted from several other plants of the same family: artichoke, Jerusalem artichoke, dahlia. and chicory, the main commercial source.
It is first  a filler replacing sugar then a thickener at high concentrations.  It can even form a kind of gel at saturation (>20%).

Inulin can be used as a substitute for sugars such as sucrose or dextrose, glucose syrup and maltodextrins in pastries or jellies and desserts.

It can also be used in recipes using honey or simply to sweeten (breakfast cereals, etc.).

Used concentrated (20%) it forms a dense and creamy material reminiscent of margarine or butter. This material can be used to reduce the fat content.

Used in melted chocolate , inulin provides a low-calorie yet creamy charge.
