From chicory root fibres. Highly soluble. Soluble fibre content 80.5%. It has a sweetening power (SP) of 50% and an anti-crystallising power (AP) of 45% compared to sucrose (ordinary sugar).
Good cold dissolution, which allows to replace all or part of the sugar in preparations without the need to heat.
Ideal for replacing sugars in meringues, mousses, creams, ice creams, cooked doughs such as cakes and sweet preparations in general.
