Powder thickener composed of carbohydrates (fermentation of corn starch). For optimal use, mix the product with a liquid. Can be used with all types of aqueous liquids. It is heat-resistant, freezable and of natural origin. You can use this product to make coulis, sauces, soups or syrups.

  • Use: Cooking has always used products to thicken sauces, creams, juices, soups, etc. Starches, starches, flour are traditional thickeners. However, they have one drawback: they must be added in large quantities, which affects the final taste.

White sangria in suspension

  • 500 g of mixture white sangria
  • 1.4 g of Xantana
  • Put the sangria and Xantana together in a bowl. Mix them well using a mixer.Filter and vacuum pack to remove any bubbles trapped inside the mixture. The consistency obtained allows to keep different elements in suspension: herbs, fruits, spherical caviar...

Iberian ham velouté

  • 50 g of Iberian ham broth.
  • 30 g of Iberian ham fat
  • 0.2 g of Xantana
  • Mix the three ingredients and emulsify them using a mixer until you obtain a smooth, lump-free emulsion. Store in the refrigerator. This cream will accompany the oyster and its pearl.
