Apricot Crispy 1-4mm: the gentle crunch of a Mediterranean stone fruit

Sosa's Apricot Crispy 1-4mm comes in the form of fine freeze-dried granules, amber-orange in colour, bringing natural crunch and apricot's sweet, slightly tart flavour. Made from a single ingredient — concentrated apricot purée — with no biscuit base or added flavouring, it retains maximum flavour expression and the fruit's natural colour.

Its fine granulometry, the finest in the Crispy fruit range, allows for even distribution and easy sprinkling — a different profile from the larger-piece versions (like 5-8mm Raspberry), designed for a visible topping rather than a discreet texture. Highly hygroscopic, it performs best in dry or fatty applications; on moist media, add it just before serving to preserve the crunch.

Applications

• Sprinkling: directly onto dry or fatty preparations, for texture and colour.
• Dry pastry: incorporate into low-hydration doughs — biscuits, financiers — before baking.
• Confectionery and baking: for a gentle fruity touch in tea blends and fillings.
• Creams and ice creams: reserve for finishing at the time of serving and store dry between uses.

Use

Store between 15 and 25°C, in a dry place away from light, in its original packaging, tightly closed. A highly hygroscopic product: a desiccant sachet helps preserve the crunch for around 15 days after opening. Without a protective coating, it softens on direct contact with moist media — reserve it for dry and fatty applications.
