This fruit processing technique consists of "sublimating" the water in the ingredients, i.e. changing the water in the ingredient from a solid state to a vapor state without going through a liquid state in order to preserve all the properties of the fruit in question. During freeze-drying, the increase in heat is controlled. Tastes, nutrients and colours are thus preserved and offer you a variety of uses.
