Bubble is a specialised preparation based on egg white and xanthan gum, designed to create stable and spectacular "bubbles". Unlike standard foams, it allows for the generation of distinct, transparent air bubbles for a unique visual finish on cocktails, dishes, or desserts.
- Usage: Mix cold, vacuum-seal to degas, then use an air pump (Foam Kit).
- Dosage: 20 g / L.

Technical Note: For acidic liquids, adding Citrate (pH corrector) is essential to stabilise the structure.

To ensure professional results and prevent bubbles from collapsing, follow these key steps:
- Preparation: Mix 20 g of Bubble per 1 L of liquid.
- Degassing: Place the mixture in a vacuum sealer (or let it rest for a long period) to eliminate residual micro-bubbles.
- Aeration: Use the Foam Kit Pro to inject air. Allow to stabilise for a few minutes before collecting the bubbles with a slotted spoon.
- Flavours: You can flavour your liquid base, but ensure it is completely fat-free.
