Sosa Ingredients' Cold Potatowhip is a plant-based texturizer (blown proteins).

This powder, derived from potato protein, is an aerating and emulsifying agent with a neutral color and taste.
For optimal use, mix the product with a liquid and use it as a plant-based alternative to egg white in cold preparations.
Its neutral taste allows for the development of preparations with more intense flavours.

Its emulsifying power improves texture, stability, and mouthfeel.
It can be used to foam liquids such as fruit purees or infusions.
It can be used to make meringues, cold sauces, and mousses.

Use

  • To foam: mix cold in a liquid base (fruit or vegetable pulps, smoothies and infusions) and apply agitation adding air to the mixture.
    To achieve a uniform and stable assembly, it is advisable to do it with an automatic rod assembly machine.
    If the liquid contains fat, the foaming effect is noticeably lost.
  • To emulsify: disperse the Potatowhip in a liquid base and add the fat part.
    Apply strong agitation until the correct emulsion is achieved.
  • Recommended dosage: 3 to 5%

May contain traces of eggs, peanuts, soy and soy based products, milk and its derivatives, nuts, celery, mustard, sesame, sulphites.
