The Foliage tuile mould from the Gourmand range by PAVONI Italia is a premium accessory designed for catering professionals who wish to bring a touch of natural originality to their presentations.

Gourmand GG077 Foliage Recipe by Paolo Griffa

For Stuffed Cabbage:

  • Savoy cabbage leaves
  • Cabbage filling
  • Brussels sprouts leaves

For Jerusalem Artichoke Leaves:

  • 100 g peeled Jerusalem artichokes
  • 10 g walnut oil
  • Beetroot juice for colour

Method:

Savoy Cabbage Leaves:

Blanch the savoy cabbage leaves and cut them into strips measuring 24 cm x 2 cm. Stuff them with the cabbage filling.

Brussels Sprouts:

Season the Brussels sprouts leaves with a mustard vinaigrette.

Jerusalem Artichoke Leaves:

Steam the Jerusalem artichokes. Blend them and emulsify with the walnut oil. Adjust the colour with beetroot juice.
Spread the mixture into the Foliage moulds and dry them at 60 °C.
Fry for a few seconds in oil at 160 °C.
