Gourmand GG076 Floralia Recipe by Paolo Griffa

This recipe highlights the delicate beauty of flowers for a spring-like dish.

For the Wild Salad:

  • Wild herb pesto
  • Edible flowers
  • Wild herbs

For the Bread Wafers:

  • 100 g water
  • 60 g flour
  • 0.6 g salt
  • 2 g fennel pollen
  • 10 g oil

Method:

Bread Wafers:

Blend all the ingredients for the wafers together. Spread the mixture into the Floralia moulds and bake for 8 minutes. Unmould the wafers.

Plating:

Arrange the herb pesto on the base of the plate, then top with the wild herbs and edible flowers. Finish the plating by placing the bread wafers on top.

This simple recipe allows you to create light and flavourful wafers, perfect for accompanying a fresh salad or decorating dishes.
