Gelbinder is a plant-based gelling and binding agent (sodium alginate derived from marine algae) that creates a heat-irreversible binding effect at cold temperatures. It binds meat, fish, vegetables and seafood without prior cooking, maintaining perfect structure through heat — whether fried, roasted or grilled.

  • Usage: Agglomeration (burgers, tartares, terrines, millefeuilles) and heat-irreversible cold or hot gels.
  • Dosage: 10–15 g/kg (agglomerates) — 0.5 to 2.5% (liquid gels).

Gelbinder: the benchmark heat-irreversible plant-based binding agent

Gelbinder by Sosa combines sodium alginate (E401, derived from marine algae), calcium sulphate (E516) and tetrasodium diphosphate (E450iii, a retarding salt). These three agents work in synergy: the alginate forms the gel network, the calcium cross-links it, and the diphosphate controls the setting speed for a manageable working time.

The resulting gel is heat-irreversible: once set, it holds its structure regardless of the temperature applied — unlike classic gelatine, which melts at service. This makes it a strategic tool for pan-fried, deep-fried or gratin preparations.

Two methods of use

1. Cold agglomeration (binding effect)
Dust Gelbinder over lightly moistened solid ingredients, shape the piece (burger, terrine, millefeuille, roulade) and leave to set for 20 to 40 minutes at room temperature. The bond is firm and elastic, holding perfectly through cooking.

2. Heat-irreversible gels
Incorporate Gelbinder into the liquid by stirring vigorously. Pour into the desired mould and leave to set. Setting begins approximately 20 minutes after hydration; full hydration is achieved after 24 hours. Firmness varies according to the medium and setting time.

Technical note: Setting is faster and firmer with calcium-rich ingredients. Conversely, very salty or acidic media slow down and weaken the gel. Pair Gelbinder with Sosa Maltodextrin to absorb surface moisture in vegetable millefeuilles and prevent layers from sliding.

  • Adds no flavour or colour to the preparation.
  • Compatible with all food types: meat, fish, seafood, vegetables, plant-based preparations.
  • Freezer-safe: assembled preparations can be blast-frozen before cooking.
  • All cooking methods supported: griddle, oven, deep-frying.

Gelbinder covers three main preparation families:

  • Meat & fish agglomerates: restructured burgers, reconstituted salmon fillets, stuffed poultry roulades, chicken-prawn terrines.
  • Vegetable constructions: vegetable or potato millefeuilles (parmentier), vegetable cannelloni, hot-serve bouillon gels.
  • Creative preparations: false pasta (Parmesan tagliatelle), hot-serve gels, texturised assemblies without prior cooking.
