Naturfoam is a natural foaming agent derived from quillaja extract. 100% plant-based, it creates highly stable foams and airy structures in any aqueous liquid—whether hot, cold, or acidic. It is the perfect tool for texturing beverages or emulsions without altering their flavour profile.

  • Usage: Dissolve in liquid (hot or cold) then aerate using a whisk, siphon, or air pump.
  • Dosage: 2 g / kg (0.2%).
  • Packaging: 400 g jar

Applications and Implementation Methods

  • Soda Siphons (CO2) or Cream Siphons (N2O): For textured beverages with prolonged effervescence or creaminess. Suitable for siphons with Nitro technology.
  • High Agitation: Use a manual or electric whisk, or an immersion blender to create instant foam.
  • Air Pump (Foam Kit): The gold standard for generating extremely stable, light bubbles (clouds).

Nitro Sour Matcha Tea – Sosa Ingredients recipe with Naturfoam

Nitro Sour Matcha Tea

A signature non-alcoholic beverage: the intensity of grade E Matcha combined with the freshness of lime and the light foam of Naturfoam — for a gastronomic beverage experience that is stable and reproducible.

Makes approximately 1.2 litres
Steps: 2

1 - Matcha tea base

  • Combine the water and matcha powder in a container.
  • Blend with a hand blender until fully dissolved.
  • Strain through a coffee filter. Set aside.

2 - Nitro soda blend

  • Combine all ingredients in a jug and blend with a hand blender.
  • Strain finely.
  • Pour the mixture into an ISI Nitro siphon. Add the pure nitrogen charge and shake well.
  • Store in a reversed bain-marie or in the refrigerator at 4°C for at least 2 hours before use.

Raspberry and Lychee Sparkling Soda

Flavoured soda mixing fruit, raspberry and lychee purees. Combine different purees and add Naturfoam to obtain very frothy, surprising and refreshing sodas.

  • 500g - mineral water
  • 50g - raspberry puree
  • 70g - lychee puree
  • 20g - sugar
  • 2g - Naturfoam
  1. Put all the ingredients in the bowl.
  2. Mix using the mixer.
  3. Finely filter the mixture with a coffee filter.
  4. Put in a soda siphon.
  5. Load with a CO2 cartridge.
  6. Shake well.
  7. Store in an inverted bain-marie or in the refrigerator at 4 °C for 2 hours before use.

Chai Non Latte

A warm and comforting drink with a spicy taste. In this preparation, we replace milk with an almond drink that pairs perfectly with the different spices. Make your own spice blends to obtain endless flavor combinations. Enjoy hot or cold.

Almond drink base Mineral

  • 500g - water
  • 50g - raw blanched almonds
  • 45g - honey
  • 0.6g - ground cinnamon
  • 0.2g - ground allspice
  • 0.15g - cardamom seeds
  • 0.2g - ground dried ginger
  • 3g - Earl Grey black tea
  1. Put all the ingredients in a tumbler.
  2. Blend at maximum speed for exactly 3 minutes.
  3. Filter with a coffee filter.

Non-Latte Chai Mix

  • 500g - Almond Drink Base
  • 1g - Naturfoam
  1. Add Naturfoam.
  2. Mix with a blender.
  3. Place mixture in a half-liter foam siphon.
  4. Add the N2O gas cartridge.
  5. Shake well Store in a bain-marie at 50ÂşC until use.
