Pork Powder Air Bag: pork rind reimagined

Sosa's Pork Powder Air Bag is a flour made from boiled pork skin, cleaned from the spine area of the animal, partially dehydrated and defatted. Once fried, it swells up to 4 to 5 times its original size, developing a flavour close to bacon, without any alteration or rancid taste. A familiar principle — wrapping meat, poultry or a vegetable in a thin slice of bacon before grilling to add fat and flavour — reimagined here for an extremely crunchy texture.

Applications

  • Innovative coating: for coating fish, meat or vegetables — as in our pork-crusted salmon fritters example.
  • Premium snacking: enjoyed as is after frying, for an airy, crunchy texture.
  • Original creations: mixed with condiments to create unique bites, or used as a base for creative textures in main dishes.

Use

Fry in hot oil at 200°C for 1.5 to 2 minutes, until the characteristic expansion is achieved. Incorporate into a frying batter for proteins or vegetables, or use alone for light, crunchy side dishes.

What happens if the oil isn't hot enough? The product won't expand properly and may absorb more oil, altering the final texture.
Can it be fried in an industrial fryer? Yes, as long as the recommended temperature is maintained.

Air Bag Shrimp


- 8 shrimp
- 100g flour
- 50g egg white
- 100g SOSA Air Bag pork farina:
- 1 teaspoon salt
- 8 skewers of 15 cm
- 1 teaspoon of oil for frying

Peel the shrimp and assemble them on the 15 cm skewers. Salt and coat with flour, egg white and Sosa farina pork air bag (in this order). Fry with oil at 180°c until golden and drain.
