Salted Butter Caramel Crispy: authentic caramel crunch

Sosa's Salted Butter Caramel Crispy — marketed by the manufacturer as Caramel Crispy Salé — comes in the form of golden-brown pieces with a firm, well-separated texture. Made from sugar, butter and cream, it captures the traditional taste of artisan caramel with a touch of salt that balances the sweetness.

This reference is a recipe evolution from the previous version (ref. 41510): Sosa has refined the profile to move to a more pronounced sweet-savoury complexity, in line with current professional expectations.

Applications

• Decoration: use directly on finished products as a decorative element.
• Fillings: incorporate into fatty or dry fillings, such as the inside of chocolates or chocolate bars.
• Dry applications only: reserved for low-moisture preparations to preserve its structure.

It works particularly well as a crunchy finish on laminated pastry filled with a mousseline or praline cream, in the spirit of a reimagined Paris-Brest.

Use

A highly hygroscopic product: we recommend using a desiccant sachet in the jar once opened, which preserves the crunch for up to 15 days. In high-moisture environments (creams, mousses), the caramel tends to dissolve — in that case, reserve it as a decoration applied just before serving, or turn to the Wet-Proof version instead. Store in a dry place away from light, at a constant temperature of 16-18°C.
