Storage & Shelf Life

24 months shelf life before opening. Store the product in a dry place, away from light, between 15°C and 25°C (59°F and 77°F), in its original closed packaging.

Lemon and White Chocolate King's Cake

Resting Time: ~ 1 Night (Ganache)
+ ~ 1 Night (Dough)
Proving/Fermentation Time: 2 to 3 hours

Inspired by the traditional Roscón de Reyes (King's Cake), this revisited version by Sosa Ingredients highlights the sophisticated combination of Cold Confit® Lemon and White Chocolate*. A professional approach to blend tradition, texture, and maximum aromatic power.

* Panier des Chefs Suggestion: For ganaches of unparalleled whiteness and finesse, we recommend WEISS ANËO 34% or VAO ORGANIC 35% plant-based chocolate.

1 - Roscón Dough

  • 1000g Strong flour
  • 100g Whole Cream (35% m.f.)
  • 50g Powdered Gold Yeast
  • 20g Salt
  • 110g Sugar
  • 20g Trehalose (Sosa)
  • 400g Butter (82% m.f.)
  • 400g Pasteurised Whole Eggs
  • 70g Orange Blossom Water
  • 15g Powdered Star Anise
  • 6g Orange Zest
  • 3g Lemon Zest

Knead all the ingredients together and let rest in a block for 30 minutes, adjusting the texture with milk if necessary.
Rest again overnight.
The next day, weigh and shape the pieces. Prove for 2 to 3 hours at 30 °C and 85% RH (Relative Humidity).

2 - Whipped White Chocolate Ganache

  • 480g Whole Cream (35% m.f.) (1)
  • 400g White Chocolate - Panier des chefs suggests ANËO 34% or VAO ORGANIC 35% (Weiss)
  • 24g Gelatine Mass
  • 600g Whole Cream (35% m.f.) (2)
  • 4g Madagascar Vanilla

Heat cream (1) and pour it over the white chocolate, the scraped vanilla pods, and the gelatine mass.
Mix well. Add the remaining cream (2). Let rest overnight.
Whip the following day.

3 - Assembly (per cake)

Cut the Roscón in half and fill with the whipped ganache.
Decorate with the Cold Confit Lemon Slices.
