Sosa Clorur is calcium chloride (E509) in flake form, used as a calcium bath in direct spherification. On contact with the Alginate incorporated into the preparation, it instantly triggers the gelling reaction and forms the membrane of spheres, pearls and caviar.

♥ Expert tip: Clorur always works in combination with Alginate. Prepare your Clorur bath in still mineral water and allow it to rest for 10 minutes before use. If your preparation is too acidic (pH < 4), adjust the pH first with Citrate — otherwise the gelling reaction will not occur correctly.

expand_moreThe calcium bath for direct spherification
Clorur by Sosa — also known as Calcium Chloride (E509) — comes in white flake form. In direct spherification, it forms the reactive bath into which the alginate preparation is dosed: on contact with calcium, alginate gels instantly from the outside inwards, forming the characteristic membrane of spheres, pearls and caviar.
The dosage of 5 to 10 g/kg allows you to adjust the reaction: a lower dosage will produce a thinner membrane (ideal for caviar), while a higher dosage will form a more resistant membrane (large spheres, ravioli shapes).
⚠️ Safety note: Avoid contact with skin, mucous membranes and eyes. In case of contact, rinse thoroughly with water. If symptoms persist, consult a doctor.
How to use
Dissolve Clorur in still mineral water under agitation. Allow the bath to rest for 10 minutes before use. Dose the Alginate preparation into the bath (30 seconds for caviar, up to 2-3 minutes for large spheres). Collect, rinse in clean water and serve.

💡 If your preparation is too acidic (pH < 4): adjust first with Sosa Citrate (formerly Kit pH) before incorporating the Alginate.
