Steps : 3
1 - Moulding
- DQ Anëo 34% Couverture Chocolate (Weiss)
- OR Whole Milk from France 36% (Weiss)
- OR Tevenn 36% (Weiss)
- OR Galaxy Dark 67% (Weiss)
- Pre-crystallize the chocolate couvertures of your choice.
- Mould the eggs using the moulds previously cleaned with a cotton pad.
- You can repeat the operation 2 times if necessary and vary by using a different chocolate for the second layer.
- Leave to crystallize for several hours at 18°C before unmoulding.
- Unmould the eggs and then using a hot plate, slightly melt the half-shells and assemble them two by two.
2 - Spraying
- 70g Anëo 34% Couverture Chocolate (Weiss)
- OU Whole Milk from France 36% (Weiss)
- OU Tevenn 36% (Weiss)
- OU Galaxy Dark 67% (Weiss)
- 30g Cocoa Butter
- Melt the couverture of your choice with the cocoa butter at 40°C and spray the mixture on the chocolate eggs.
3 - Decorations
- DQ Tevenn 36% Couverture Chocolate (Weiss)
- DQ Cocoa Powder (Weiss)
- DQ Praline Powder (Weiss)
- Cut strips of rhodoid.
- Pre-crystallize the Tevenn 36% couverture and put in a bag.
- On a strip of rhodoid, pipe small drops.
- Lightly sprinkle the drops with the praline powder, then the cocoa powder.
- Cover with a strip of rhodoid and press lightly using a cap.
- Leave to crystallize for several hours at 18°C before carefully removing the decorations from the rhodoid.
