Sosa Ingredients Maltodextrin E12 is a sugar derived from corn, used in molecular cuisine preparations.
Used as a flavoring carrier or bulking agent, Maltodextrin has a very low sweetening power and dissolves easily in water.
It can also absorb good quantities of oil and is very easily digested.
Finally, it can be treated to make it a bulking or encapsulating agent.

Technical description of Maltodextrin:
Maltodextrin is a sugar derived from corn, in molecular cuisine.
This type of sugar is found in products labeled low in fat.

- techniques allow it to be made into encapsulating and/or bulking agents.
Maltodextrin dissolves easily in water, can absorb large amounts of oil, and is very easily digested.

Example of use:
If you mix a large amount of maltodextrin with a fatty ingredient, such as hazelnut oil, bacon fat, or melted chocolate, the maltodextrin absorbs this ingredient while keeping its powder form.
This gives powders of all flavors, which are nice to sprinkle on the preparations they accompany.

By playing with the proportions of oil and maltodextrin, and by mixing less, we can create "lumps" of flavored maltodextrin.
As this is a sugar, these "lumps" can be fried, so as to caramelize the exterior and make them crunchy.
Maltodextrins are widely used as a carrier (flavoring...), or bulking agent. They have a very low sweetening power.
