Raspberry Wet Proof: crunchy raspberry that resists moisture

Sosa's Raspberry Wet Proof starts from vivid red freeze-dried raspberry with a sharp, slightly tart, highly aromatic flavour. Each piece is protected by a fine film of cocoa butter that acts as a shield against moisture: the crunch stays intact in a whipped ganache, an entremet or a sorbet, without bleeding colour or softening, even in refrigerated display.

Its chromatic and aromatic vividness makes it a fresh take on the classic raspberry-chocolate duo, while opening the door to other pairings: pistachio, rose, lychee.

Applications

• Pastry: sprinkle over whipped ganaches, sorbets, macarons, tarts for a crunchy, aromatic finish.
• Ice creams and frozen desserts: inclusion and topping in ice creams, sorbets, parfaits.
• Chilled pastry: finish on frozen tarts, yoghurt mousses, chilled creams — keeps its crunch for several days.
• Chocolate work: technical filling in chocolates and bars.
• Mixology: cocktails and cold drinks, resists condensation.

Use

Reserve for cold applications: heat melts the cocoa butter coating, avoid the oven. Ideal as a finish in refrigerated display, where the crunch holds up. Store between 14 and 16°C, in a dry place, away from light, container tightly closed. Once opened, keep at this temperature: the product keeps for 1 month under these conditions.
