Sosa Iota Pro-Pannacotta is a pure Iota carrageenan (E407) extracted from red algae, formulated to produce soft, supple, creamy gels — ideal for plant-based pannacottas, flans and creamy desserts without eggs. Its thixotropic texture liquefies under agitation and returns to its original consistency at rest. It can be heated up to approximately 50°C once set and performs better in calcium-rich preparations.

Iota carrageenan for egg-free plant-based pannacottas and creamy desserts

Sosa Iota Pro-Pannacotta is a pure Iota carrageenan (E407) extracted from red algae, a versatile texture-modifying agent: gelling agent, thickener, stabiliser and suspending agent. It produces soft, supple, elastic, thixotropic gels — meaning they liquefy under agitation and return to their original consistency at rest. This makes it the tool of choice for restaurant creamy desserts, unmoulded pannacottas and drinkable jellies. It performs better in calcium-rich preparations and is compatible with alcoholic liquids. Not suitable for freezing; the set gel withstands a service temperature of up to approximately 50°C.

How to use

Mix Iota Pro-Pannacotta with other dry ingredients. Pour the mixture onto cold liquid with vigorous stirring until fully dispersed. Heat to 80°C (boiling recommended) while stirring. Never pour the liquid onto the powder. Pour into the chosen vessel and allow to cool — gelling occurs between 60 and 70°C.
