IMFUM Nature® Cloth: The Professional Chef's All-Purpose Cloth

The IMFUM Nature® cloth is a patented technical tool designed to meet the daily needs of food professionals: protecting food during vacuum sealing, controlling moisture, developing flavours through infusion and extending shelf life. This pack of 50 sheets measuring 35x35 cm is the ideal format to test the technique on smaller cuts — individual portions, cheeses, vegetables and small fish pieces.

One Cloth, Five Uses

• Vacuum protection: Wraps the food and shields the bag from sharp bones and fish bones, preventing punctures and eliminating the need for thicker bags or aluminium foil.
• Absorption and drying: Thanks to its exceptional absorption capacity (20 times its weight in water in under 3 seconds), the cloth eliminates excess moisture, improves texture and preserves the colour of food.
• Controlled maturation: Used in combination with vacuum sealing, it extends shelf life up to 45 days for red meat and 15 days for fish refrigerated at 3°C.
• Aromatic infusion: Place herbs, spices or condiments directly — aromas infuse naturally during the resting time.
• Filtration: Replaces muslin cloth for filtering broths, juices and preparations without pressure, for an impeccably clear result.

How to Use — Aromatic Infusion

1. Unfold the IMFUM Nature® cloth flat on your work surface.
2. Sprinkle a first layer of aromatics (herbs, spices, salt, condiments) directly onto the cloth, in the area where you will place your food.
3. Place your food (meat, fish, cheese, vegetables, fruit...) on this first layer.
4. Sprinkle the remaining aromatics over the top of the food — the ingredient is thus surrounded on both sides.
5. Fold the cloth to wrap your food hermetically.
6. Vacuum seal or wrap tightly in food-grade film, then leave to rest in the refrigerator according to the intensity desired.

💡 For a smoky note: substitute or combine your aromatics with IMFUM® fine smoked salt, or wrap your food in an IMFUM Fumé® cloth before folding the Nature® cloth over it — both ranges are designed to work together.

100% viscose cloth, free from paraffin, petroleum jelly and wax — no chemical transfer to food. Highly flexible, it adapts easily to any shape, unlike rigid bone guard cloths. Patented and made in France, compostable and biodegradable within 6 months.
