Sosa Pure Agar-Agar is a 100% agar-agar gelling agent (E406), additive-free, extracted from red algae (Rhodophyceae). It forms firm, transparent, low-elasticity gels that withstand heat up to 70-80°C once set, and can be served hot or cold. Its key feature: gelling begins at just 40°C, allowing fragile elements to be incorporated before the gel fully sets and preserving delicate aromas.

Pure agar-agar: the plant-based gelling agent for hot and cold applications

Sosa Pure Agar-Agar is a gelling agent (E406) composed exclusively of agar-agar extracted from red algae, with no additives. Used in Japan since the 15th century under the name kanten, it is today the professional reference for firm, highly transparent, thermoreversible gels that can be served hot or cold. Its gelling power is 8 to 10 times greater than animal gelatine, allowing very low dosages. It is not suitable for strongly acidic preparations or freezing, and produces a firm, low-elasticity texture — distinct from the soft, elastic textures achieved with animal gelatine.

Its distinctive feature: gelling begins at just 40°C, well below boiling point. This means the entire liquid does not need to be heated, allowing delicate aromas to be preserved and other elements to be incorporated before the gel fully sets.

How to use

Mix agar-agar into cold liquid while stirring. Heat to 90°C (boiling recommended) with continuous stirring. Use immediately after dissolution. Gelling begins at 40°C — pour quickly into the chosen vessel. The gel can be reheated as many times as needed.
