Sosa Gracila Gel is a Gracilaria verrucosa red seaweed powder — a 100% plant-based gelling agent not classified as a food additive, with no E number. A versatile alternative to agar-agar, pectins and carrageenans, it produces gels that are creamier and more melt-in-the-mouth thanks to its slower gelling. Gracila Gel: pure Gracilaria seaweed, plant-based gelling agent with no E number

Sosa Gracila Gel is a Gracilaria verrucosa red seaweed powder — a 100% plant-based gelling and thickening agent, not classified as a food additive and therefore carrying no E number. It is a versatile alternative to agar-agar, pectins and carrageenans, with one key technical advantage: its slower gelling produces creamier, more melt-in-the-mouth textures where agar-agar would give a firmer, more brittle gel. Once set, the gel can be blended to achieve highly glossy, silky-textured preparations. It withstands temperatures above 70°C and is thermoreversible from 85°C. It does not alter the flavour of the base liquid — at high dosages, it may impart a slight brownish tint, only noticeable in colourless or transparent preparations.

It performs well across a wide range of media: acidic liquids (lemon juice, vinegar), salty liquids (soy sauce), dairy bases, and even high-proof alcohols from 0.8% dosage.

How to use

Gracila Gel is easily soluble in cold liquids up to 45°C. Heat to a minimum of 85°C (boiling recommended) to fully activate its gelling power. Gelling occurs on cooling. For a glossy, silky result, blend the set gel. Use a dosage of 0.1 to 1.5% depending on the desired texture and the nature of the liquid.
