The Sosa Fruits & Sauces range offers high-quality semi-candied fruit, preserved in syrup. These pieces are produced using the signature COLD CONFIT® technique (low-temperature candying), ensuring a tender, melt-in-the-mouth texture close to fresh fruit.

This product is ideal for plate decorations, verrine garnishes, pastry interiors and fillings, as well as in ice creams thanks to its freezability.

Maximum Technical Stability: The fruit can reach negative temperatures without crystallisation (unlike standard candied fruit), thus retaining a smooth texture and a unique flavour, even after thawing.
Pastry & Ice Cream Applications (HORECA Use)
Product is particularly suitable for the preparation of:
- Mousses / entremets
- Ice creams / Italian ice / Sorbets
- Cake batters (cakes, brioches, puddings, etc.)
- Direct Serving (paired with a coulis, as accompaniment to ice creams, cottage or fresh cheeses, in verrines)
It is advisable to shake the product before use to distribute the sauce well.
Storage
The product can be stored for 24 months and should be stored in a dry place, away from light, between 15°C and 25°C, in its original closed packaging.
Ingredients and Allergens
The main ingredients are raspberries, sugar, thickener pectin (E440), citric acid (E330) and preservative potassium sorbate (E202). This product contains traces of MILK and derivatives, so it is important to check the composition for people with food allergies.
