Chocolate Peta Crispy: fizz wrapped in cocoa

Sosa's Chocolate Peta Crispy comes in the form of brown granules measuring 2 to 4.5mm, coated in a blend of chocolate and cocoa butter. Each granule contains pressurised carbon dioxide that's released on contact with saliva, producing the characteristic peta crackle alongside an intense cocoa flavour.

As with the whole range of Sosa's creative sparkling decorations, its cocoa butter coating acts as a hydrophobic barrier that slows moisture absorption and extends the granule's crunch and fizzing capacity.

Applications

• Decorative and sensory finish: incorporate directly onto finished preparations.
• Fillings and coatings: mix into fatty or low-moisture preparations to preserve the fizz.
• Ice creams and creams: sprinkle just before serving to benefit from its protective coating.

Use

Store in a cool, dry place, between 16 and 18°C, and reseal the packaging tightly after each use. A highly hygroscopic product: exposed to ambient humidity, it loses its firmness and effervescent capacity.
