White Chocolate Peta Crispy: milky sweetness with a fizz

Sosa's White Chocolate Peta Crispy comes in the form of cream-coloured granules measuring 2 to 4.5mm, coated in a blend of 52% white chocolate and cocoa butter. Each granule holds pressurised carbon dioxide, released on contact with saliva for a characteristic effervescent burst. The white chocolate brings a sweet, buttery, milky profile that softens the crackle.

As with the whole range of Sosa's creative sparkling decorations, its cocoa butter coating acts as a hydrophobic barrier that delays moisture absorption and extends the product's firmness and fizzing power.

Applications

• Decoration: incorporate directly onto finished preparations.
• Flavour contrast: pair with tangy or red fruits to balance the sweetness of the white chocolate.
• Creams and ice creams: sprinkle just before serving to preserve the sparkle.

Use

Store in a cool, dry place, between 16 and 18°C, and reseal the packaging tightly after each use. A highly hygroscopic product: exposed to ambient humidity, it loses its firmness and effervescent capacity.
