Yopop Peta Crispy: creamy freshness and fizz

Sosa's Yopop Peta Crispy comes in the form of cream-coloured granules measuring 0.5 to 6mm, coated in white chocolate and flavoured with yoghurt. Each granule holds pressurised carbon dioxide, released on contact with saliva for a characteristic effervescent burst, paired with a creamy, fresh yoghurt note.

As with the whole range of Sosa's creative sparkling decorations, its cocoa butter coating acts as a hydrophobic barrier that delays moisture absorption and extends the granule's firmness and fizzing power.

Applications

• Decoration: incorporate directly onto finished creations.
• Dairy desserts: pair with mousses, ice creams or entremets to reinforce the creamy note.
• Cold application: add just before serving to preserve the fizz.

Use

Being a highly hygroscopic product, it's recommended to store it with a silica bag, which helps preserve its quality and texture for around 15 days after opening.
