Dark Chocolate 51% Peta Crispy: bold cocoa and a strong fizz

Sosa's Dark Chocolate 51% Peta Crispy comes in the form of brown granules measuring 2 to 4.5mm, coated in a blend of 51% dark chocolate and cocoa butter. Each granule holds pressurised carbon dioxide, released on contact with saliva for the characteristic effervescent burst. The dark chocolate brings an intense, slightly bitter flavour that deepens the fizz and balances the sweetness of the carbonated sugar.

As with the whole range of Sosa's creative sparkling decorations, its cocoa butter coating acts as a hydrophobic barrier that slows moisture absorption and keeps the granule's firmness and fizzing capacity for longer.

Applications

• Decoration or inclusion: incorporate directly onto or into finished preparations.
• Roasted flavour pairings: combine with bitter, roasted or coffee profiles to reinforce the cocoa note.
• Cold application: add just before serving to preserve the fizz.

Use

Store in a cool, dry place, between 16 and 18°C, container tightly closed after each use. A highly hygroscopic product: exposed to ambient humidity, it loses its firmness and effervescent capacity.

Do not bake or add hot: heat melts the granule and releases the gas prematurely, causing it to lose its effervescent effect. Always add cold, ideally just before serving.
