Procrema 100 Hot is a complete stabilising base for pasteurised dairy ice creams. An all-in-one high-dosage base: stabilisers, emulsifiers, aerating agents, technical sugars and milk proteins. Dissolve cold, pasteurise and heat to 80°C to activate, then mature and churn.

Procrema 100 Hot by Sosa is a high-dosage stabilising powder that brings together in a single product all the components needed to produce pasteurised dairy ice creams: dextrose, glucose syrup, palm and palm kernel oils, skimmed milk powder, cream, milk proteins, emulsifiers (E472a, E471), plant-based gums (carob, alginate, guar, carrageenan) and diphosphates. Hot process is mandatory — heat to 80°C to activate.
How to use
Dissolve cold under vigorous agitation. Pasteurise and heat to 80°C to activate the product. Leave to mature for 8 hours before churning. Freeze as quickly as possible.
